Is it possible to show private fields to not-logged-in users in the item submission form? For instance, we would like to ask for contact details.

In short the answer is no… private metadata are stripped down from the viewer when you are not logged in… The only way I see for this is to hold the information in temporary public metadata. You could allow the item submission only for a Draft or Private status. Then, before publishing the item, you could copy and paste this field info to a private metadata. Cleaning the original metadata will also assure that it does not appear in public item page.
Not ideal, but it is how I see this going by now…
